I've used part of my vacation to cook favorite recipes. Tonight I made the seafood gumbo from my grandmother's River Road Recipes cookbook. I did it the old fashioned way, making a dark roux from bacon grease. I tossed in shrimp, oysters, and I left the crab in the shell. Turned out perfectly. Felt like I'd eaten in a restaurant on the Gulf of Mexico instead of the 50 miles from the coast where I live. *shrugs* It's summer. Gotta make a gumbo.
Made pizza from scratch over the weekend.
And last week I breaded eggplant slices in cornmeal before deep frying them and then serving them layered with marinara and shredded mozzarella. Not sure what I made. It's not really an eggplant parmesian, but it seemed like a good idea, so I tried it. Delicious.
Feels good to get back into the kitchen without having to rush at the end of a work day.
