Today's cook and freeze for the semester is of my "throw some shit in a pot" variety. The freezer is almost full:

Italian chicken -- I don't have a snappier name. It's chicken baked with artichoke hearts, sundried tomatoes, red wine, garlic, oregano, basil, paprika, parmesan and misc. veg. Today I used sweet peas.

Smokey bacon vegetable soup -- made this one up tonight out of my head. Fried bacon to render fat, added a splash of red wine when the fat started to burn away, sauteed chopped onion in the result and then added olive oil for more fat, chopped celery and chopped carrot. Added garlic to sautee. When all vegetables tender, I added a quart of beef stock from the fridge (saved from the other day), lots of red wine, a quart of water, tomato paste left over from cooking the other day, and brought to a boil. Added sea salt, pepper, crushed red pepper, fresh mushrooms, thyme, frozen mixed veggies, can of kidney beans, can of diced tomatoes. Cooked down. Smelled smokey, so I brought that up with some Worstershire. Cooked down some more. When really smokey and tastey, I decided it was probably done and I shouldn't mess with it anymore. I think it will go well with French bread, a salad, and a dollop of sour cream.

Four pages written and posted to "private," and I'm feeling intrigued by what these people are thinking/feeling/doing. I'm feeling joy. I'm liking this. Glad I'm at it again.
